Rhubarb Bread

Not sure what to do with all your fresh rhubarb this season? Here’s the perfect recipe for you to try!

Ingredients Needed:

1 1/2 cups of Brown Sugar

2/3 cup of Oil

1 Egg

1 cup of Sour Milk (1 cup of Milk + 1 tablespoon of Vinegar; Let sit for 5 minutes or until milk is curdling)

1/2 tsp of Salt

1 tsp of Baking Soda

1 tsp of Vanilla

2 1/2 cups of Flour

2 cups of Sliced Rhubarb

Topping:

1/2 cup of Sugar

2 tbsp of Soft Butter

1 tsp of Cinnamon

2 tbsp of Flour

Combine brown sugar and oil together. Add egg, sour milk, salt, baking soda, vanilla, and flour. Blend until creamy. Fold in rhubarb. Pour in 2 8X4 greased loaf pans. Combine topping mix in small bowl. Sprinkle over top of batter. Bake at 325 degrees for 40 minutes. Enjoy!
