Easy Beef Enchiladas
Enchiladas are such a delicious and easy recipe to make with what you got at home! Here’s what you need:
- Taco size flour tortillas (use corn if you prefer less-doughy)
- 1 lb ground beef
- 1 value size can of red enchilada sauce (I use mild)
- 1 green pepper (optional)
- 1 small onion (optional)
- 1 1/2 cups of shredded cheese (cheddar or Mexican)
In a skillet, sautée your pepper and onion. When about done, add your ground beef. Once cooked, add about 1/2 cup of enchilada sauce and 1/2 cup of cheese to it and let melt together. Grab a 9x13 dish, pour a bit of the sauce on the bottom to prevent sticking. On a separate surface, prepare your tortillas and add them to the dish. This should get you 6-7 enchiladas. Pour the rest of the sauce on top and then sprinkle the rest of the cheese on top. Bake at 350 degrees for around 20 minutes. Top with tomatoes, lettuce, sour cream, etc. as you desire. Enjoy!
