Breakfast Burritos

Measurements make 10 burriots

Ingredients Needed:

  • 10 large toritillas

  • 18 scrambled eggs

  • 1½ cups mild cheddar cheese, shredded

  • 2 chopped onions

  • 1 package of beef bacon, chopped, divided

  • 4 potatoes, chopped

To your liking, season the eggs and potatoes with the following:

  • salt

  • pepper

  • garlic powder

  • fresh parsley, chopped, for garnish

Fry your bacon and chop once finished. Set aside. In your bacon grease, add your onion and cook for around 20 minutes on a low-medium heat until caramelized. Finely chop your potatoes and add in a separate oiled cast iron, cook for around 25 minutes on a medium heat or until fork tender. Add your eggs to a pan that is big enough and season to your liking. Cook for around 5 minutes or until they are scrambled. Grab your tortillas and assemble your burritos. Place in zip lock bag and store in the fridge up to 5 days or freezer for months. Heat up in the microwave for 1:30 or until warm.
