John Wayne Casserole

This is such a great casserole for cooler weather. Super filling and delicious!

Ingredients:

  • 1 lb of BFF ground beef

  • 1 cup of water

  • 1 oz of taco seasoning

  • 1 cup diced yellow onion'

  • 1 cup of diced green pepper

  • 10 oz rotel diced tomatoes and green chilies, drained

  • 1/2 bag of Mama Sheila’s corn, thawed

Biscuit Layer:

  • 3 cups of bisquick mix

  • 1 cup of milk

Topping:

  • 8 oz cream cheese, softened

  • 1/2 cup of mayo

  • 1 tbsp garlic powder

  • 1/2 tsp of salt

  • 2 cups of shredded mozzarella and cheddar cheese blend

Directions:

  1. Preheat oven to 325 degrees.

  2. Brown your ground beef and drain.

  3. Add the water and taco seasoning to the beef, Simmer for 4 minutes.

  4. Add diced onions, pepper, rotel, and corn to the pan.

  5. Stir well and reduce the heat to low.

  6. Dump the bisquick mix and water into a mixing bowl and stir until a sticky dough forms.

  7. Dump into a 9x13 baking dish and spread out evenly.

  8. Dump the ground beef mixture on top of the dough and spread.

  9. Dump the cream cheese, mayo, onion powder, and salt into a mixing bowl and mix until smooth. Add on top of ground beef mixture.

  10. Sprinkle the cheese on top.

  11. Place in the oven and bake for 40 minutes.

Allow to sit for a few minutes before serving, enjoy!
